Sauteed Garlic Spinach 

This easy side dish makes dinner simple and flavor packed.

Ingredients
 

2 large bags of spinach leaves

2 tablespoons olive oil

2 tablespoons minced garlic
1 teaspoon kosher salt

1/2 teaspoon black pepper 

1 tablespoon unsalted plant-based butter

fresh lemon juice to taste

Directions
 

1. Heat 1 tablespoon unsalted plant-based butter and 2 tablespoons olive oil in a large skillet over medium-high heat until the butter is melted. Add minced garlic and cook until fragrant, about 30 seconds.
 

2. Add one bag of spinach and 1/2 teaspoon of the kosher salt.  Stir until the spinach is wilted, 1 to 2 minutes. Add the second bag of spinach and remaining 1/2 teaspoon kosher salt and toss until wilted, 1 to 2 minutes. Season with black pepper and stir to combine.
 

3. Turn off heat and add fresh lemon juice to taste and enjoy.
