What can I say, my favorite person on the planet is celebrating another trip around the sun. If I never knew what unconditional love was, I have experienced it with this lady here. She has talked and loved through some pretty hard and dark times. She has seen me at my very rock bottom and still manages to love and forgive me for being not so nice...but when I say I am sooooo grateful the Lord put us together, I mean it...I love my sister to LIFE.
From our laughs to our own crazy "inside jobs" (quesadilla maker) The Lord put you together with so much love and understanding I wish e'rybody had a sister like you....but you MINE!!!! If I had $1 for every time I've had a dish from someone and I could tell they just dumped the jackfruit out the can and straight into a dish, I would have a very large sum of money. Listen, you have to season every layer, and please cook your jackfruit!!!!

It makes a huge difference between having an ok dish and elevating your dish. Trust me.

This jackfruit will simmer for a least 45 minutes to 1 hour (yes, I said what I said 🤣😂)

When preparing tofu, you want flavor throughout, not just on the outside. Here's the secret to the best tofu for your recipes.

in a large saucepan, add either vegetable broth or any type of vegan broths to the pan. Once you remove the tofu for the package, add it to the pan with broth, making sure the broth covers the tofu. Bring to a boil over medium high heat. Boil the tofu for approximately 30-45 minutes. Once done. remove tofu for the pan (be careful it will be very delicate).
Allow the tofu to cool and place it in an airtight container and freeze the tofu. By freezing it, it will take on a meatier texture for your stir-fry dishes and more.

My favorite go-to plant-based power breakfast is Banana Cream Pie Chia Seed Pudding.

1/4 cup chia seeds
1/2 cup full-fat coconut milk
1/2 cup unsweetened soy or oat milk
1 1/2 tablespoons agave nectar (you can use maple syrup too)
1 tsp vanilla extract
1 rip banana, mashed
1/2 banana, sliced this is for topping
2 tablespoons crushed graham cracker, for topping

In a bowl combine the chia seeds, coconut milk, soy milk, agave, vanilla and mashed banana together. Whisk ingredients until well combined.
Cover the bowl and place it in the refrigerator for 45 minutes to 1 hour to firm up.

Once firm, scoop equal amounts into 2 cups, top with sliced banana and crushed graham cracker and ENJOY!!!

1/2 cup full-fat coconut milk
1/2 cup unsweetened soy or oat milk
1 1/2 tablespoons agave nectar (you can use maple syrup too)
1 tsp vanilla extract
1 rip banana, mashed
1/2 banana, sliced this is for topping
2 tablespoons crushed graham cracker, for topping

In a bowl combine the chia seeds, coconut milk, soy milk, agave, vanilla and mashed banana together. Whisk ingredients until well combined.
Cover the bowl and place it in the refrigerator for 45 minutes to 1 hour to firm up.

Once firm, scoop equal amounts into 2 cups, top with sliced banana and crushed graham cracker and ENJOY!!!

WOW...Can't believe it's been a yesr already. Total Right Ankle Replacement. About 7 years ago, i rolled my ankle, i "walked" it off, not knowing that time, i fractured it. As the months and years went by, it started giving me problems. It got to the point that normal everyday activities got harder and harder because I could not stand for long periods of time.

So, after many physical therapy appointments, a few painful steroid shots (those lasted about 3-4 days) I was finally approved for an ankle replacement. BEST THING EVER. I was non weight bearing for 4 weeks, 50% weight bearing (crutch assisted) for 2 weeks and then boot assisted full weight for about 2 weeks.

I'm still doing physical therapy but when I tell you it's weird sometimes realizing I'm NOT in pain anymore when I walk because I was so used to walking in pain every single day for the past few years.

So now, i have a bionic Ankle and it feels great. I'm grateful to the Lord that my body did not reject anything. One thing my amazing surgeon said when it was over was "It was a mess in there" She had to stretch my achilles heel, repair tendons, and clean out a lot of damage. I'm so grateful for the journey, it was so worth it!!!
