SLOPPY JOE DONE RIGHT

Did you know today is National Sloppy Joe Day. Here's a great vegan recipe for the best sloppy joe you can eat. We are going to use lentils, that's right, those small round gems of flavor and nutrients. This recipe is smoky, savory and packed full of goodness. Tag me or leave a comment if you try it.



1 cup of vegetable broth

1 cup of water

1 cup of green lentils

1/2 cup diced green peppers

1/3 cup diced red onions

1 tablespoon of minced garlic

2 tablespoons tomato paste

2/3 cup ketchup

2 tablespoons brown sugar (use 1 tablespoon if you want it less sweet)

1 teaspoon liquid smoke 1 teaspoon dijon mustard

1 teaspoon chili powder

1 teaspoon vegan friendly Worcestershire sauce

salt and pepper to taste

3 tablespoons oil for cooking

dash of hot sauce (optional)


Rinse green lentils in strainer. In a saucepan, over medium- high heat, add liquid (1 cup water and 1 cup vegetable broth) and lentils. Bring to a boil, then reduce heat to a simmer and cover for about 15-20 minutes, or until tender. If there is still water after the lentils are tender, drain off any excess liquid and set the lentils aside.


While lentils are cooking, in a large skillet, over a medium heat, add oil, onion, garlic, and bell pepper. For about 3 – 4 minutes, saute and stir the contents or until the peppers and onions are tender and slightly browned.

Add the tomato paste, ketchup, brown sugar, dijon mustard, chili powder, and vegan worcestershire sauce, and stir until completely combined.


Add cooked lentils and liquid smoke to the mixture and stir to combine. Continue to cook the lentil mixture over low heat until mixture starts to thicken, stirring occasionally.

Add salt and pepper to taste, as needed. Remove from heat once you achieve the taste you desire.


For the best experience, serve on a buttery toasted bun with pickles and sliced onions.
